Raisin Nut Squares

Here’s a fun and quick recipe, adapted from “Raw Energy” by Stephanie Tourlas:

This is a tasty 5 minute dessert that doesn’t last long! Perfect for an unexpected guest when you’re out of cookies to serve.

Ingredients:

Basic recipe:
2 c walnuts (or pecans, almonds or a mixture, cashews
1 c raisins
Water (or fruit juice) as needed

I add: 1 t cinnamon
1-2 T tahini
3 T unsweetened carob or cocoa powder
1/3 c fruit-sweetened cranberries
(All the above available at TipTop Country Store in Brookfield center)

Directions:
Chop nuts in food processor to grainy consistency (or less, if you like chunkier)

Add raisins and any optional ingredients except cranberries; blend til uniform consistency. If needed, add water VERY slowly by the half teaspoon until batter forms a ball.

Then add cranberries and blend for 30 seconds or less, just to roughly chop but still in big pieces.

Spread in glass pan with cover. Cut into squares to serve. Keeps in refrigerator for 5 days or more, but our double batch always disappears much faster!
